Vegetable Soliloquy

Asparagus, Brussels Sprouts, Carrots, Mushrooms, Zucchini, spinach, celery, sweet peppers, corn, squash, green beans, swiss chard, arugula, butter lettuce, broccoli, cauliflower, leeks, Oh how I love you!

How maligned, and ignored you are in this world. Shoved to the side of the plate, stuffed into cans, fed to the family dog, or thrown out. The real victims are those who ignore you, refuse to eat you (50 percent of Americans!) you because they don't 'like' the flavor, or think that the sad salted canned varieties are the true representations of your flavor. How they can go through life thinking that you taste terrible is beyond my comprehension. Have they never had you sauteed in olive oil till just cooked, grilled to perfect, or simply enjoyed eating you raw as nature intended? And how clever was nature? To give us all these foods packed with minerals, nutrients vitamins. Why take a pill? Simply eat more veggies!

It stuns me that people shun these vitamin packed flavor powerhouses in favor of meat. Why does the vegetable have to be a side dish? Why not make the vegetable the main course, and the meat the side? Why can you not be the star that you should be. Would people's moods be better? Health be better? Would they support local agriculture more in their quest to get the freshest flavors? Woud they become veggie addicts, putting you in anything and everything that they could?

How sad I feel, that instead, they eat their potato chips, meats, and sugary snack foods. All while you are simply waiting for them to discover you, and learn how truly delicious you are and how much better they feel with your natural boost of vitamins, fiber, and nutrients.

So today I implore you, go to the farmers market this weekend, and choose some fresh vegetables to try, take them home and don't boil them, instead let their true flavors shine by simply cooking them lightly. Open up your hearts and home to veggies. Your life will be better for it.
